The weather has been so crazy this year that it’s been hard to get seeds started. Even the greenhouse is under too much stress this past winter. So, I’m on an eat wild spring greens mission! I can’t believe I’ve turned into my grandmother. We (all the grandkids) would kid that she mowed her yard in the morning, and cooked it for dinner at night.
If you’ve never tried Chickweed, you’re in for a treat. Yes, I know it’s a weed, but it’s edible, mild, and delicious. Use it in salads, soups, omelets, or as a side. Because it’s too much trouble to get rid of all the chickweed in the greenhouse, I confine it to one area and cultivate it. It’s gorgeous. I use only the new tender growth, and harvest it by the handfuls.
In addition to chickweed, the shepherd’s purse is really plentiful right now. It’s another delicious, edible weed. It tastes like mild mustard greens and broccoli combined. Tired of having weeds?
