We stayed in an apartment, when we were in Victoria, BC, and our flight left really early in the morning. We had 4 things left in the fridge, so I made huge, protein packed, breakfast sandwiches, to get us through most of the day!
Don’t worry, I still have to posted a lot of pictures of Canada, the train trip, etc., I’m just killing time until they’re ready!
Egg Salad Supreme
Ingredients
- Eggs, hard boiled and diced
- Soft cream cheese
- Yellow mustard, to taste
- Salt and pepper
- 4 slices sourdough bread
- 4 strips bacon, cooked
Instructions
- Mix together the first 4 ingredients.
- Smear 2 slices of bread with the egg salad. Lay 2 strips of bacon on each. Cover with other slice of bread.
