I decided fried chicken was a great way to initiate my new electric frying pan. It’s hard to say enough good things about this pan. It cooks very evenly, no sticking (heated well, with oil in it), and a clear glass lid.
My grandmother used to fry everything with cornmeal and garlic, and it’s a fond and delicious memory for me.
Fried Chicken (Gluten Free)
Ingredients
- Extra virgin olive oil
- 6-10 garlic cloves, smashed
- Corn flour
- Cornmeal
- Granulated garlic powder (lot)
- Good all purpose seasoning
- Chicken pieces (I used skinless boneless chicken thighs)
Instructions
- Put about 1/4" oil in a large skillet. Add garlic cloves, and heat on (very) low, to infuse the oil. garlic should soften, but not brown.
- Remove the cloves, and heat the oil to about 375 degrees.
- Mix all the dry ingredients.
- Dredge chicken pieces both sides.
- Fry until golden on each side, and chicken is cooked. I usually cover the pan when I flip the pieces.
