I’ve been obsessed with pickled okra, lately. So, of course, I started thinking about fried okra. Then, I thought about fried pickles. And naturally that led to Fried Pickled Okra (in MY head)! Use mild or spicy pickled okra, and you have an amazing side or appetizer. The batter makes them incredibly light and crunchy.
Fried Pickled Okra
Ingredients
- 1 lb or more pickled okra, drained well
- Cornstarch
- 3/4 cup flour
- 3/4 cup cornmeal
- 2 1/2 tsps baking powder
- 1/2 tsp salt
- (Add other spices you like)
- 1 cup plus 2 TBSP beer
- 1 TBSP honey (optional)
Instructions
- Heat oil in heavy pan.
- Dust okra with cornstarch.
- Mix together flour, cornmeal, baking powder, salt, and any spices you like. Be careful not to add spices with added salt. I added smoked paprika, garlic powder, and pepper.
- Mix honey and beer into dry ingredients.
- Dredge cornstarch coated okra in batter and place in hot oil.
- Cook until lightly brown. Place on rack to drain and keep crisp.
- Serve with your favorite dipping sauce or just sprinkle with hot sauce.
