Fried Rice (Cooking for One)
Ingredients
- 2 TBSP peanut or coconut oil
- 2 green onions, chopped, including green
- 1 tsp fresh ginger, finely chopped
- 1 tsp fresh garlic, finely chopped
- 1 cup cooked rice
- 1/4 cup frozen peas and carrot combination
- 6 jumbo shrimp, cooked
- 1 scrambled egg, cooked and pieced up (optional)
- 1-2 tsp soy sauce or tamari
- 1 tsp toasted sesame oil
- 1/4 tsp ground coriander (optional)
- Pepper
- 1 green onion, chopped, including green
- 2 TBSP chopped cilantro
Instructions
- Heat oil in a large skillet over medium-high heat. When hot add onions, ginger, and garlic stirring constantly. Continuing stirring and cooking until onions turn slightly limp
- Add rice, cook and stir for a minute
- Stir in peas and carrots and cook for a minute
- Stir in shrimp and egg, drizzle with soy sauce and sesame oil, and sprinkle on coriander and pepper. Stir and heat all ingredients through.
- Serve garnished with chopped green onions and cilantro
- Notes: When you buy fresh ginger, just break off a small knob at the store. Then wrap it well and store it in the freezer (you can grate it frozen). Use beef, pork, chicken, shrimp or a combination. If you want a bit more moisture and more of a "Chinese food" flavor, add a little oyster sauce (in a bottle in the Asian section of the grocery store). If you have leftover fried rice, mix it with a little panko breadcrumbs and egg, make patties, coat the outside in more panko, and fry them.
