And now for a very yummy side dish, Garlic Butter Rice. It pairs perfectly with any protein and any vegetable. While that’s true, we binged on it, like it was a meal!
Garlic Butter Rice
Ingredients
- 6 TBSP butter
- 4-6 cloves garlic chopped
- 1 1/3 cups Jasmine rice
- 2 cups chicken broth
- 2-4 TBSP chopped fresh basil (parsley or cilantro)
- 1 tsp kosher salt
- 2 TBSP grated Parmesan, Romano, or Asiago cheese
Instructions
- Set sauté function on instant pot pressure cooker. Melt butter
- Add garlic. Cook briefly, not more than a minute.
- Stir in rice.
- Stir in broth, basil, and salt.
- Place lid, set to pressure cook for 6 minutes. Quick release the pressure.
- Remove lid and stir in cheese.
- Other additions to stir in, after rice is cooked: sautéed mushrooms, cooked asparagus, lemon zest
- If you don’t have an instant pot, use your favorite rice cooking pot. Melt the butter, and follow all the instructions. Cover the pot, lower the heat to simmer, and cook for 15 minutes.
