Gingerbread (Gluten Free)
Ingredients
- Make sure all ingredients are at room temperature.
- 1/2 cup coconut oil or softened butter
- 1/2 cup honey
- 1/2 cup molasses
- 3 eggs, room temp
- 1 cup sour cream or plain yogurt, room temp
- 1/2 cup unsweetened applesauce
- 1-2 TBSP grated fresh ginger
- 1 cup garbanzo bean flour
- 1/2 cup quinoa or spelt or sweet rice flour
- 1/4 cup coconut flour
- 1/4 cup potato starch (flour)
- 4 tsp ground ginger
- 2 tsp ground cardamon
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Heat oven to 425.
- Beat together oil, honey, and molasses. Add eggs and beat well. Add sour cream and applesauce. Combine all liquid ingredients well.
- In another bowl, combine the remaining (dry) ingredients.
- Now combine the wet and dry ingredients and pour into a greased 8x8 pan (I used glass).
- Bake about 35 minutes. I let the center of the gingerbread stay a slightly moist.
- If you want to make this "not" gluten free, substitute 2 cups all-purpose flour for the garbanzo, quinoa, coconut, and potato starch.
