Ingredients

  • Make sure all ingredients are at room temperature.
  • 1/2 cup coconut oil or softened butter
  • 1/2 cup honey
  • 1/2 cup molasses
  • 3 eggs, room temp
  • 1 cup sour cream or plain yogurt, room temp
  • 1/2 cup unsweetened applesauce
  • 1-2 TBSP grated fresh ginger
  • 1 cup garbanzo bean flour
  • 1/2 cup quinoa or spelt or sweet rice flour
  • 1/4 cup coconut flour
  • 1/4 cup potato starch (flour)
  • 4 tsp ground ginger
  • 2 tsp ground cardamon
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Heat oven to 425.
  2. Beat together oil, honey, and molasses. Add eggs and beat well. Add sour cream and applesauce. Combine all liquid ingredients well.
  3. In another bowl, combine the remaining (dry) ingredients.
  4. Now combine the wet and dry ingredients and pour into a greased 8x8 pan (I used glass).
  5. Bake about 35 minutes. I let the center of the gingerbread stay a slightly moist.
  6. If you want to make this "not" gluten free, substitute 2 cups all-purpose flour for the garbanzo, quinoa, coconut, and potato starch.
