One of our new sides that just happens to be good during the holidays too is Gingered Celery Salad. Whether you love it for the yummy flavor, the crunch, or as a great digestive, it’s all good!
Gingered Celery Salad
Ingredients
- 2 TBSP apple cider vinegar*
- 2 TBSP fig vinegar (or other fruit vinegar)
- 1/4 cup extra virgin olive oil
- 1/2 tsp ground ginger or 1 1/2 tsp freshly grated ginger
- 1 lb celery, thinly sliced (I used processor)
- 1 crisp apple, thinly sliced (Jonathan, Jazz, Honeycrisp, Golden Delicious, etc)
- 1/2 - 1 cup chopped pistachios, shelled, roasted, salted (almonds would also be good)
- 1/4 - 1/2 cup finely chopped crystallized ginger
- Salt

Instructions
- Whisk together all ingredients.
- Toss together all ingredients.
- Add dressing and toss together.
- Keeps for a couple days in fridge.
- *Adjust vinegar to your taste.
