Gluten Free Peanut Butter Cookies
Author: Kathy-- Here is a recipe I found in a Jan/Feb 2010 issue of Taste of Home magazine for gluten free Peanut Butter Oatmeal Cookies, click here to view. I made a few additions. As far as a gluten free cookie goes these have a good texture and taste good.
Ingredients
- 1/2 cup chunky peanut butter
- 1/2 cup packed brown sugar
- 1 egg
- 1 1/4 cup quick cooking oats
- 1/2 tsp baking soda
- 2 TBSP chocolate chips
- 2 TBSP raisins or craisins
- 2 TBSP chopped nuts
Instructions
- Cream peanut butter and brown sugar until fluffy.
- Beat in egg.
- Add oats and the rest of the ingredients to creamed mixture. Mix well.
- Drop by tablespoonfuls onto greased baking sheet, 2 inches apart, and flatten slightly.
- Bake at 350° for 6 to 8 minutes.
- Cool on wire racks.
