OK, it’s my word for the nachos I make, for me. Although, many would say, “That’s not a nacho.” I maintain that it is, and additionally it’s simple, fast, easy, and absolutely delicious and satisfying.
I get the mouth texture and richness I want, with 2 or 3 ingredients – no beans, no sour cream – just chips, Neufchâtel cream cheese, and meat (optional). And, the great side benefit is that they are less calories, although not the reason that I make them. Like a lot of people, I assumed that the cream cheese version had more calories, but without refried beans or the need for sour cream, or the need to use as much cheese (that’s also higher in calories than Neufchâtel) for the desired mouth-feel, I can enjoy one of my favorite indulgences. Originally, I made them because I wanted nachos, but the only cheese I had in the house was cream cheese. I have since done a side-by-side taste test, and the cream cheese wins.
Ingredients
- Good tortilla chips
- Neufchâtel cream cheese*
- Roasted chicken, pork, taco meat, whatever your favorite
Instructions
- Heat oven to 350 (or you can microwave them)
- Smear each chip with about 1 TBSP cream cheese, top with small pieces of meat.
- Place on a baking sheet.
- Bake for 10-15 minutes until heated through and cream cheese is soft and warm.
- If a few slices of avocado, a little guacamole, or pico make you happy - add it!
- *Neufchâtel is cream cheese with 1/3 less calories
