Gooey Butter Cookies

This recipe so does not meet the quality standards I have for food.  The problem is they’re so decadently good.  This is the signature cookie of St. Louis, Missouri, and we were introduced to it a few years ago when we stopped there to visit some friends.  If you don’t think this is one of the best cookies you’ve ever had, seek help!

Gooey Butter Cookies

Prep Time: 10 minutes

Yield: 4 dozen

Ingredients

  • 1 (8 ox) package cream cheese, softened
  • 1/2 cup butter (1 stick), softened
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1/2 tsp butter flavor
  • 1 1/2 (18.25 oz) packages yellow cake mix
  • 1/4 cup powdered sugar

Instructions

  1. Using a mixer, cream together the cream cheese and butter.
  2. Mix in egg yolk, vanilla, and butter flavor.
  3. Mix in the dry cake mix just until combined. Now I know this leaves you with a half box of yellow cake mix, but if you buy another package, you can make them again!
  4. Lay out a piece of plastic wrap turn the dough onto the wrap, bring it together in a ball, wrap it and place it in the fridge overnight. The cookies won’t turn out as good if you don’t do this overnight step.
  5. Heat oven to 350°. Lightly grease a baking sheet. I usually use a non-stick baking mat or parchment to bake these cookies.
  6. Roll the dough into 1” balls, then roll in powdered sugar.
  7. Place 1” apart on the cookie sheet.
  8. Bake for 10 – 13 minutes. Better when they do not brown.
