Gournay Squash Casserole

Gournay Squash Casserole is pure cheesy squash deliciousness.  The magic of Boursin Garlic and Fine Herbs Gournay Cheese transforms squash into ultimate comfort food.

Total Time: 1 hour

Yield: Serves 6

Ingredients

  • 2 lbs yellow summer squash, cut in 1/4" thick slices
  • 1 medium onion, diced
  • 8 oz cream cheese, softened
  • 1 (5.2 oz) container Boursin Garlic and Fine Herbs Cheese, softened
  • 1 egg
  • 1/2 cup Mayo
  • Salt and pepper
  • 1/2 cup buttery cracker crumbs

Instructions

  1. Heat oven to 350.
  2. Place squash and onion in a medium saucepan with 1 cup water and 1/2 tsp salt. Cook on medium heat until tender, about 15 min.
  3. Drain well, and place in a large bowl with cheeses.
  4. Mix until well blended. When cooled, mix in egg, mayo, salt and pepper.
  5. Place mixture in greased 2 quart baking dish.
  6. Scatter cracker crumbs on top.
  7. Bake for 30 minutes until bubbly and crumbs slightly browned.
