Gournay Squash Casserole is pure cheesy squash deliciousness. The magic of Boursin Garlic and Fine Herbs Gournay Cheese transforms squash into ultimate comfort food.
Gournay Squash Casserole
Ingredients
- 2 lbs yellow summer squash, cut in 1/4" thick slices
- 1 medium onion, diced
- 8 oz cream cheese, softened
- 1 (5.2 oz) container Boursin Garlic and Fine Herbs Cheese, softened
- 1 egg
- 1/2 cup Mayo
- Salt and pepper
- 1/2 cup buttery cracker crumbs
Instructions
- Heat oven to 350.
- Place squash and onion in a medium saucepan with 1 cup water and 1/2 tsp salt. Cook on medium heat until tender, about 15 min.
- Drain well, and place in a large bowl with cheeses.
- Mix until well blended. When cooled, mix in egg, mayo, salt and pepper.
- Place mixture in greased 2 quart baking dish.
- Scatter cracker crumbs on top.
- Bake for 30 minutes until bubbly and crumbs slightly browned.
