Grated Corn

This is one of the simplest and easiest recipes, but requires a little labor.  It’s a great way to put the kids to work though.

Grated Corn

Prep Time: 15 minutes

Yield: Serves 6-8

Ingredients

  • 6 ears of corn, peeled and cleaned
  • 6-8 TBSP butter (and extra for buttering pan)
  • Salt and pepper

Instructions

  1. Heat oven to 350°.
  2. With a cheese grater (like a box grater), grate all the corn kernels off all the ears, into a large bowl.
  3. Make sure you grate completely down to the cob. You'll have lots of juice, and I'm not saying it's not messy.
  4. Transfer the grated corn to a buttered baking pan or cast iron skillet.
  5. Salt and pepper the surface.
  6. Dot with butter.
  7. Bake for 20-30 minutes, or until it starts to look a little dry and brown on top.
