This is one of the simplest and easiest recipes, but requires a little labor. It’s a great way to put the kids to work though.
Grated Corn
Ingredients
- 6 ears of corn, peeled and cleaned
- 6-8 TBSP butter (and extra for buttering pan)
- Salt and pepper
Instructions
- Heat oven to 350°.
- With a cheese grater (like a box grater), grate all the corn kernels off all the ears, into a large bowl.
- Make sure you grate completely down to the cob. You'll have lots of juice, and I'm not saying it's not messy.
- Transfer the grated corn to a buttered baking pan or cast iron skillet.
- Salt and pepper the surface.
- Dot with butter.
- Bake for 20-30 minutes, or until it starts to look a little dry and brown on top.
