I’m making salads with what I have in the garden. The only thing I wish I had added to this one was some of the sorrel. It’s a great summer salad that keeps wonderfully.
Green Bean Arugula Salad
Ingredients
- Extra virgin olive oil
- Garlic cloves, roughly chopped
- Blanched green beans
- Salt and pepper
- Crushed red pepper
- Splash of fig, pear, or seasoned rice vinegar (a sweet vinegar)
- Arugula
- Tomatoes, sliced
Instructions
- If you don't want to use raw garlic, heat it for a couple minutes in oil.
- Toss green beans with oil, garlic, salt, pepper, crushed red pepper. Let marinate for a couple hours.
- Add vinegar and toss arugula with green beans, top with tomatoes, and serve at room temperature.
