Green Bean Fritters

Oh, do we have a lot of green beans right now.  That means I’m looking for new and interesting ways to use them.  Good fritters or croquettes are always crowd pleasers, and these are a delicious summer side.

Total Time: 45 minutes

Yield: Serves 12

Ingredients

  • 3/4 cup corn flour
  • 1 tsp granulated garlic powder
  • 1 tsp granulated onion powder
  • 1 tsp baking powder
  • 1 tsp salt
  • 5 eggs
  • Black pepper
  • Crushed red pepper
  • 4 TBSP chopped fresh basil
  • 1 cup crumbled feta cheese
  • 6 strips bacon, cooked and crumbled
  • 2 lbs green beans, blanched, drained, and patted dry
  • Extra virgin olive oil

Instructions

  1. In a small bowl, combine the first five ingredients, and set aside.
  2. In a large bowl, beat 5 eggs. Stir in the next 5 ingredients. Now stir in the dry ingredients that you set aside.
  3. Chop the beans into about 1" pieces. Combine them well with the batter.
  4. There will be a lot of beans and very little batter, but it will be enough to hold them together when cooked.
  5. Heat about a quarter inch of oil in a large skillet, over medium heat. Use about a quarter cup of green bean mixture for each fritter. Brown on both sides. Add oil as need.
  6. Be careful not to overcrowd the pan. I use 2 spatulas to turn each fritter over - one to slip underneath, and one to guide the top. You'll have a few runaway green beans, cook's snack.
  7. Note: I used extra virgin olive oil, because I wanted that flavor. If you use extra virgin, and you don't keep enough in the pan, it will smoke. So if it starts to smoke, add more, that's your signal (no pun intended!).
  8. Serve with reduced balsamic, salsa, or a mixture of mayonnaise and a little hot sauce.
