It looks like this might be a good week to get a few more recipes for side dishes to choose from. Green beans are a good price at HEB. You could always put them in a slower cooker with potatoes and ham or bacon and chicken or beef broth, but for something a little different you might want to try this recipe. You might have to go to one of the larger HEB stores to find sage (or find someone who grows herbs, if you don’t).
Green Beans with Feta
Ingredients
- 1 pound green beans, cleaned
- 2 Tablespoons of extra virgin olive oil
- 4-6 sage leaves, roughly chopped
- 1/4 pound salami, julienned
- Hot pepper flakes
- 1/2 teaspoon ground coriander
- 1 teaspoon soy sauce (optional)
- Salt
- 15-20 small to medium basil leaves, roughly chopped
- Crumbled gorgonzola or feta
- Drizzle with balsamic vinegar
Instructions
- Place green beans in boiling salted water, and boil for 3-4 minutes. Drain and place immediately into ice water to stop the cooking process. Drain well.
- Heat oil in a large skillet and add sage, salami, and hot pepper flakes. When salami starts to brown, add green beans.
- After mixture cooks a couple minutes (or when green beans reach desired texture), add coriander, soy sauce, and salt.
- Place green bean mixture in a bowl. When cool, toss with basil and feta, and drizzle with balsamic vinegar.
- Toss and serve.
