Because of a recent freeze, I decided to turn some of our fresh basil into pesto. Then, coincidentally I got a side of salmon, and Grilled Pesto Salmon became our new favorite salmon recipe. You will love how easy and delicious this recipe is. Pesto really stands up to the flavor of salmon. You can use store bought pesto, but if it’s too oily, drain some of the oil off, or add more grated Parmesan. I made thick homemade basil pesto, so that it would coat the fish better.
Grilled Pesto Salmon
Ingredients
- A side of salmon
- 1 lemon
- All purpose seasoning (I used Fish Monger by Fire & Smoke)
- Basil pesto
Instructions
- Squeeze lemon juice all over the fish. Place in the fridge for 1/2 hour.
- Remove from fridge, pat dry, and place on a pan or platter. Sprinkle with seasoning. Coat well with pesto.
- Grill until done. I used our Traeger smoker set at 275 and it took 20 minutes.
- Throw some fresh chopped red tomatoes on top, and you’ve got Christmas!
