Yet another great easy dish to prepare. Most of the time when I buy pork loin, I cook it as a roast or cut thick pork chops, and sometimes I do this recipe for a change.
Grilled Pork Loin
Ingredients
- Pork loin roast
- Extra virgin olive oil
- Granulated garlic powder
- Smoked paprika
- Mixed spice blend, like Frankly Delicious (in previous post)
Instructions
- Butterfly the pork loin by making a lengthwise cut down center of roast, cutting to within 1/2" of other side. Open roast, and place between 2 sheets of plastic wrap; flatten entire loin to 1/2" thickness, using a meat mallet or pounding it with a rolling pin (or cast iron pan bottom for that matter). Depending on the size of the loin, if when you make the first initial cut, you still think it's going to be too thick, slice through each of the halves, just like you made the initial cut. You'll have little triangular looking peaks, but once you pound the whole thing, it'll be great - looks like a big pork steak.
- Coat the loin on both sides with the oil, then with garlic, smoked paprika, and lots of spices. If you don't have a favorite mixed spice blend, choose some from Asian Flavors, Italian Flavors, Greek Flavors, Mexican Flavors
- If there is no salt in your spice mix, make sure you add some.
- Wrap and place in fridge at least 2 hours or overnight.
- Set meat out about an hour before you intend to grill it.
- Grill loin "steak" to your desired doneness.
