My assistant is too exhausted to transfer pictures for me, so the lake pictures and recipes will have to wait until tomorrow! The good news is, the large garden is tilled and ready, and the tomatoes are planted. When I got home I planted the pepper and the eggplant plants I bought at Graham Trade Days. I just can’t stand living without some kind of crop! I have to start some more seeds this week. I picked a lot of lettuce when I got home and made a great salad for supper. Also have some pea shoots that I let flower and produce actual peas and I picked a bunch of those. Hands down they are the best peas I’ve ever had. We’re just eating them right out of the pods. I ordered the pea shoot seeds from Kitazawa, and had good intentions to pick them and make stir-fry – didn’t happen, so I’m going for the peas.
While we’re waiting for the lake pictures, lets talk about a couple quick recipes. Kathy told me about a grilled sandwich she’s been making that’s wonderful.
- couple slices of good bread
- mozzarella
- pepperoni
- avocado
- little tomato sauce, or tomato paste or sun-dried tomato paste in a tube, or sriracha mixed with pressed garlic spread on the bread
- grill it
Another good recipe to try is broiled marinated portobello mushrooms. You can make a grilled sandwich with these and cheese or just eat them as a side. To make the marinade and mushrooms:
- heat a little extra virgin olive oil and fresh garlic together
- mix with fresh lemon juice, Worcestershire, and dijon mustard
- drizzle gill side of the mushrooms with the mixture, let sit about 1/2 hour, then broil or grill until done
