Grilled Squash Toast
Ingredients
- Squash – calabicita, yellow, or zucchini
- Extra virgin olive oil
- Fresh basil, you’ll need some whole leaves and some torn
- Kosher salt
- Artisan bread or any good quality crusty bread
- Garlic cloves, cut in half lengthwise
- Cream cheese
Instructions
- Slice squash in about ¼” pieces. Place squash in a large bowl and drizzle with olive oil. Toss with some torn basil and salt. Set aside.
- Slice bread in about ½” pieces. Drizzle each piece, on only one side with olive oil.
- Grill the bread and the squash on both sides until you begin to see grill marks.
- When the bread is done, rub each piece with the cut side of a garlic clove (on the side of the bread with olive oil). Smear a little cream cheese over that, top with one or two squash slices, place a basil leaf on the squash, then drizzle with a little oil.
