Ham (Meat) Loaf Two Ways

I know the picture is not exactly of ham loaf, it’s of sliced leftover ham loaf, fried!  I forgot to take a picture before I fried it.  As you can see, it’s fabulous this way.  Check the instructions at the bottom of the recipe.  This is one of my go-to recipes for leftover ham.

Ham (Meat) Loaf Two Ways

Total Time: 1 hour

Yield: Serves 4-6

Ingredients

  • 3/4 lb ham, ground (I use my leftover ham for this, and grind it in the food processor)
  • 3/4 lb other ground meat - like pork or turkey
  • 1/4 cup chopped onion
  • 1/2 cup quick cooking oats
  • 2 eggs beaten
  • 1/2 cup evaporated milk, cream, or half and half
  • 1 TBSP chopped parsley and/or celery leaves
  • 1 TBSP yellow mustard
  • 1 1/2 tsp Worcestershire sauce
  • Pepper
  • Other additions could be:
  • Cook crumbled bacon
  • Green pepper, diced
  • Leftover cooked spinach
  • Leftover mashed potatoes
  • Cheese

Instructions

  1. Heat oven to 350.
  2. Combine all ingredients.
  3. Form a loaf on a greased baking pan.
  4. Bake for about 60 - 75 min.
  5. If you have leftovers, cut thick slices. Heat oil in a large skillet. Dredge the slices in flour, then beaten egg, then panko. Fry, and oh yum it's delicious.
