We probably need a dessert break today! I thought I might have a restaurant to talk about but I haven’t been anywhere remarkable. Went to a Mexican restaurant in Belton and an Italian restaurant in Waco and didn’t have a bad meal, just not one to talk about either. So let’s do cookies.
Honey Peanut Butter Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup honey
- 1/2 cup brown sugar, firmly packed
- 1 egg
- 1/2 cup peanut butter, all natural, no sugar
- 2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- In the large bowl of an electric mixer, cream together butter, honey, and brown sugar.
- Add egg and mix well.
- Add peanut butter and mix well.
- In a small bowl, combine flour, baking soda, and salt.
- Add dry ingredients to peanut butter mixture and mix well.
- Refrigerate dough until it firms up.
- Preheat oven to 350°.
- Form dough in walnut size balls.
- Place on a greased cookie sheet.
- Press with fork.
- Bake about 10 minutes or until slightly brown.
