I Can’t Believe It’s Cheese Grits

Every once in a while I have a “I can’t believe I made this” moment!  You can’t beat the flavor of this, but you can cut the calories pretty easily.  I need calories for my precious lady I cook for, so this is the pumped up version.

I Can’t Believe It’s Cheese Grits

Total Time: 15 minutes

Yield: Serves 4-6

Ingredients

  • 1 1/2 cups chicken broth
  • 1 1/2 cups heavy cream (could use half and half or milk)
  • 1 cup instant grits
  • 3 TBSP butter
  • 6-8 oz cream cheese (could use neufchatel- 1/3 less calories)
  • 1/2 tsp granulated garlic powder
  • Salt and pepper

Instructions

  1. In a heavy saucepan, combine broth and cream. Cover and bring to a boil.
  2. Lower heat and whisk in grits. Cover and cook about 5-10 min. until thickened.
  3. Stir in the rest of the ingredients. Continue stirring and cooking until thick and creamy.
