I’m crazy about guacamole, but not just any guacamole, really good guacamole. This is my favorite recipe, and I have to make it for Don’s family reunion every year. It has a certain richness and flavor you can’t get with anything but my secret ingredient – umeboshi paste. Umeboshi is made from Japanese salted plums. It gives the guacamole a much better flavor than lime and salt. It is a bit expensive, but a container of it will make quite a few batches. You can find it at Whole Foods, Natural Grocer, and Central Market, in the Asian section. Most gourmet or large health food stores should carry it.
Lanie’s Guacamole
Ingredients
- 2 medium avocados, cubed
- 2 green onions, thinly sliced
- 2-4 TBSP chopped cilantro
- 2 tsps umeboshi paste
- 1/2 tsp ground cumin
Instructions
- Place all ingredients in a bowl, and using two knives, combine all ingredients. Now, if you can't figure out how to work the knives, use something else! I like my guacamole chunky, thus the knife work.
