Lanie’s Guacamole

I’m crazy about guacamole, but not just any guacamole, really good guacamole.  This is my favorite recipe, and I have to make it for Don’s family reunion every year.  It has a certain richness and flavor you can’t get with anything but my secret ingredient – umeboshi paste.  Umeboshi is made from Japanese salted plums.  It gives the guacamole a much better flavor than lime and salt.  It is a bit expensive, but a container of it will make quite a few batches.  You can find it at Whole Foods, Natural Grocer, and Central Market, in the Asian section.  Most gourmet or large health food stores should carry it.

Total Time: 15 minutes

Yield: Serves 1-4

Ingredients

  • 2 medium avocados, cubed
  • 2 green onions, thinly sliced
  • 2-4 TBSP chopped cilantro
  • 2 tsps umeboshi paste
  • 1/2 tsp ground cumin

Instructions

  1. Place all ingredients in a bowl, and using two knives, combine all ingredients. Now, if you can't figure out how to work the knives, use something else! I like my guacamole chunky, thus the knife work.
