Limas and Bacon

Limas and Bacon

Ingredients

  • 1-2 TBSP butter
  • 3 slices bacon, diced
  • 1 large rib celery, sliced
  • 8-12oz frozen lima beans
  • 1/2 cup broth
  • 1/2 tsp smoked paprika
  • 1/2 tsp granulated garlic powder
  • 1/2 tsp granulated onion powder
  • 1/4 tsp dried thyme
  • Frankly Delicious seasoning*
  • 2 TBSP sour cream
  • 2 TBSP heavy cream
  • 1 tsp mustard

Instructions

  1. In a medium saucepan, melt butter and add bacon. Continue cooking bacon until about halfway done.
  2. Stir in celery and continue cooking until bacon is crisp.
  3. Add limas, broth, and all the seasonings. Cover and continue cooking until limas are very soft. Add additional broth if needed.
  4. When most of broth has evaporated, add sour cream and cream. Cook on low heat until reduced and there is a creamy consistency.
  5. Stir in mustard and serve. Add additional crumbled bacon on top when serving. I mean, what could it hurt?
