If you want an easy, one pot meal this summer, Mac and Cheese with Sausage and Beans is perfect. There are loads of substitutions and additions to make on this quick and simply delicious meal. Use homemade or boxed mac & cheese as a base for a great one pot creation.
Mac and Cheese with Sausage and Beans
Ingredients
- 2 boxes Annie's Macaroni and Cheese
- 2 TBSP Dijon mustard
- Cooked smoked sausage, cut in bitesize pieces
- 1 can cannellini (white kidney beans), drained and rinsed
- Frozen peas
- Fresh baby spinach, or cooked greens
Instructions
- Prepare mac and cheese according to directions, adding mustard to sauce. Reserve 1 cup of the macaroni cooking water.
- Combine meat, beans, peas, and greens together. Add reserved cooking water as needed. Heat thoroughly.
- If desired, serve topped with extra grated cheese or buttered bread crumbs.
- Instead of smoked sausage, try ham, cooked chicken, cooked ground beef, or cooked fajita meat.
- If you're using ham, combine it with cooked, cut asparagus. Cooked cauliflower would be good to make the macaroni more vegetable dense.
