Mashed Potatoes and Celery Root

At first glance, it looks like just mashed potatoes.  But one taste tells you that they are a fabulously light, and remarkably scrumptious version.  They are a perfect summer side dish.  If you’re not familiar with celery root, click here for a little more information and picture of this odd root vegetable.  Not always easy to find in a lot of grocery stores, Natural Grocers usually has it.

Mashed Potatoes and Celery Root

Ingredients

  • 2 medium russet potatoes, peeled and cut each into 3 large pieces
  • 1 medium size celery root (celeriac), peeled and cut into large cubes
  • 1/4 cup butter
  • 1/4 cup crumbled feta
  • 1/3 cup sour cream
  • Salt & pepper

Instructions

  1. In a medium pot, add about 1/2” water. Place potatoes and celery root in pan. Sprinkle with salt.
  2. Boil until everything is soft. Add water, if necessary.
  3. When done, drain any remaining water. Add all ingredients and mash well.
  4. Other additions: 1 tsp grainy mustard, cream, bacon bits, garlic
