At first glance, it looks like just mashed potatoes. But one taste tells you that they are a fabulously light, and remarkably scrumptious version. They are a perfect summer side dish. Not always easy to find in a lot of grocery stores, Natural Grocers usually has it.

Ingredients
- 2 medium russet potatoes, peeled and cut each into 3 large pieces
- 1 medium size celery root (celeriac), peeled and cut into large cubes
- 1/4 cup butter
- 1/4 cup crumbled feta
- 1/3 cup sour cream
- Salt & pepper
Instructions
- In a medium pot, add about 1/2” water. Place potatoes and celery root in pan. Sprinkle with salt.
- Boil until everything is soft. Add water, if necessary.
- When done, drain any remaining water. Add all ingredients and mash well.
- Other additions: 1 tsp grainy mustard, cream, bacon bits, garlic
