Create an easy, delicious meal, side dish, or lettuce wrap with Mexican Beef Rice. It’s quick and perfect comfort food for our cold winter days. I used an Instant Pot electric pressure cooker, but stovetop would work as well.
Mexican Beef Rice
Ingredients
- 1-2 TBSP olive oil
- 1 pound ground beef
- 1 cup diced red onion
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 2 cups broth
- 2 cups picante
- 1 cup long-grain white rice, rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup corn kernels
- 1/4 cup chopped fresh cilantro
- 1 cup shredded Mexican cheese
Instructions
- Heat oil in the bottom of an electric pressure cooker set on sauté. Add beef, onion, all the spices and salt. Cook and stir, crumbling beef, until browned, about 5 minutes. Stir in broth, picante and rice.
- Close and lock the lid. Select high pressure. Set timer for 8 minutes.
- Release pressure carefully using the quick-release method. Unlock and remove lid.
- Set pressure cooker back on sauté. Add beans, corn, and cilantro. Stir occasionally until they are heated through.
- Transfer to a serving dish; top with shredded Mexican cheese.
- Other toppings: jalapeños, sour cream, avocado, crispy onions, cooked and crumbled bacon
