Mexican Beef Rice

Mexican Beef Rice

Create an easy, delicious meal, side dish, or lettuce wrap with Mexican Beef Rice.  It’s quick and perfect comfort food for our cold winter days.  I used an Instant Pot electric pressure cooker, but stovetop would work as well.

Mexican Beef Rice

Ingredients

  • 1-2 TBSP olive oil
  • 1 pound ground beef
  • 1 cup diced red onion
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 1/2 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 2 cups broth
  • 2 cups picante
  • 1 cup long-grain white rice, rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded Mexican cheese

Instructions

  1. Heat oil in the bottom of an electric pressure cooker set on sauté. Add beef, onion, all the spices and salt. Cook and stir, crumbling beef, until browned, about 5 minutes. Stir in broth, picante and rice.
  2. Close and lock the lid. Select high pressure. Set timer for 8 minutes.
  3. Release pressure carefully using the quick-release method. Unlock and remove lid.
  4. Set pressure cooker back on sauté. Add beans, corn, and cilantro. Stir occasionally until they are heated through.
  5. Transfer to a serving dish; top with shredded Mexican cheese.
  6. Other toppings: jalapeños, sour cream, avocado, crispy onions, cooked and crumbled bacon
