Mike’s Cornbread

My nephew, Mike, made this cornbread recipe for me, and it’s fabulous.  I have a similar recipe, but I think I like his better.  When I made the pork roast at the lodge, this was one of the sides.  If you’re like me, and don’t really like dry, southern cornbread, you’ll love this recipe.

Mike’s Cornbread

Total Time: 45 minutes

Yield: Serves 16-20

Ingredients

  • 4 pkgs of Jiffy corn muffin mix
  • 2 (15.25 oz) cans cream corn
  • 2 eggs
  • 1/2 cup sour cream

Instructions

  1. Heat oven to 350.
  2. Mix all ingredients, and place in a greased 9x13 pan.
  3. Bake for 30-40 minutes.
  4. You don't need butter. It's great on it's own.
