Minted Zucchini

My neighbor has some great vegetables coming in, and he gave me zucchini and potatoes.  I decided to give the zucchini some spring zest.  My editor didn’t like the picture of the finished dish, so there you have it.  It did taste delicious, however.

Minted Zucchini

Total Time: 15 minutes

Yield: Serves 4

Ingredients

  • 2-3 TBSP butter
  • 2 medium zucchini, cut into cubes
  • 1 tsp granulated garlic powder
  • 1 tsp granulated onion powder
  • Salt and pepper
  • Chopped fresh mint

Instructions

  1. Melt butter in a skillet. Add zucchini and all seasoning except mint.
  2. Cook until done to your liking. Sprinkle with freshly chopped mint while zucchini is still hot.
