This is an irresistible, updated take on the classic seven layer salad. I forgot what a fabulous side this is. So, Mixed Up Eight Layer Salad is a new addition at the lodge this year. Of course, I added a couple things, and realize everyone prefers that I mix it up. One of the perfect things about this side is that I make it hours before I need it. And even if there are leftovers, it’s good for a couple days. At the lodge, I use a rectangular aluminum pan, because I prefer having everything distributed for each serving.
Mixed Up Eight Layer Salad
Ingredients
- 1 lb shredded lettuce
- 1/4-1/2 cup chopped green onion
- 8-10 oz frozen peas, defrosted
- 4-5 hardboiled eggs, diced
- 1 cup thinly sliced ham, diced
- 1-1 1/2 cups cooked and crumbled bacon
- 1 cup shredded cheddar cheese (plus extra to sprinkle on top)
- 1 1/4 cup mayonnaise
- 2/3 cup parmesan
- 1 tsp sugar
- 1 tsp rice vinegar or lemon juice
- Salt and pepper
- Avocado slices
- Ranch dressing

Instructions
- I use an oblong pan so everything is distributed well.
- Layer all ingredients.
- Mix all dressing ingredients. Spread layer over salad. At this point you can hold it in the refrigerator for several hours. Just before serving mix everything together, and sprinkle with extra shredded cheese.
- If the salad needs extra dressing, use a little ranch dressing.
- Serve with avocado slices on the side.
