Mushroom, Ham, and Cheese Strata is amazingly scrumptious fall comfort food. I turned it into a one dish meal by adding greens, but asparagus would be great,also.
Mushroom, Ham, and Cheese Strata
Ingredients
- 3 TBSP butter
- 1 small onion, chopped
- 1 clove garlic, pressed or minced
- 2 cups chopped spinach or baby kale or asparagus (optional)
- 4 cups sliced mushrooms
- 3-4 oz ham, chopped
- Salt and pepper
- 1 cup shredded Swiss cheese
- 2/3 cup grated Parmesan or Romano cheese
- Snipped herbs such as basil and thyme
- 5 eggs
- 1/2 cup sour cream
- 1 TBSP Dijon
- 1 cup cream
- 5 cups bread cubes
Instructions
- In a large skillet, over medium heat, melt butter. Add onion. Cook and stir for 1 minute. Add garlic. Cook for another minute. Stir in greens. Cook for a couple more minutes. Stir in mushrooms. Cook until mushrooms are tender, stirring only occasionally. Stir in ham, and salt and pepper. Turn off heat.
- In a bowl combine cheeses and herbs.
- In another bowl, whisk 2 eggs. Now, whisk in sour cream and Dijon. If you add the sour cream and Dijon to all the eggs, it clumps. Now, whisk in the rest of the eggs. Whisk in cream.
- In a greased, square 2 quart baking dish, layer half the bread, half the mushroom mixture, half of the cheese mixture. Then create another layer of bread, mushroom, and cheese. Then pour the egg mixture over all.
- Cover and refrigerate 4 - 24 hours.
- Heat oven to 325. Bake uncovered for 55-60 minutes, until knife inserted in middle, comes out clean.
- Rest for 10 minutes, before serving.
