Mushroom Spinach Soup

When I made the Vegetable Tower the other day, I had leftover fillings.  A lot of our leftovers reappear as soup, and this one is delicious and simple to make.  I decided to top it with cheese, basil, bacon, and a drizzle of extra virgin olive oil.  It only made one serving, so don’t tell Don!

Mushroom Spinach Soup

Total Time: 10 minutes

Yield: 1-2 Servings

Ingredients

  • Leftover spinach filling from Vegetable Tower
  • Leftover mushroom filling from Vegetable Tower
  • 1 cooked potato (I used white, but sweet would be very good)
  • Broth (and add a little white wine, if you want)
  • Salt and pepper and whatever other seasoning you want

Instructions

  1. Put all ingredients in blender. Add broth until you get desired thickness.
  2. Heat and eat.
  3. Serve with crusty bread and a salad.
  4. Soup toppings to consider: green onion, cilantro, feta, chevre, Greek yogurt, bacon
