When I made the Vegetable Tower the other day, I had leftover fillings. A lot of our leftovers reappear as soup, and this one is delicious and simple to make. I decided to top it with cheese, basil, bacon, and a drizzle of extra virgin olive oil. It only made one serving, so don’t tell Don!
Mushroom Spinach Soup
Ingredients
- Leftover spinach filling from Vegetable Tower
- Leftover mushroom filling from Vegetable Tower
- 1 cooked potato (I used white, but sweet would be very good)
- Broth (and add a little white wine, if you want)
- Salt and pepper and whatever other seasoning you want
Instructions
- Put all ingredients in blender. Add broth until you get desired thickness.
- Heat and eat.
- Serve with crusty bread and a salad.
- Soup toppings to consider: green onion, cilantro, feta, chevre, Greek yogurt, bacon
