Nacho Tomatoes

I’m working on the generous tomato harvest right now, and of course Hatch Green Chile Tortilla Chips!  I love nachos, but sometimes I don’t want the calories.  These have big flavor, and there’s certainly a lot you can add to them, just like building a nacho.

Nacho Tomatoes

Total Time: 1 hour, 15 minutes

Yield: Serves 6

Ingredients

  • 3 medium to large tomatoes, cut in half through the middle
  • Salt and pepper
  • Granulated garlic powder
  • Granulated onion powder
  • Extra virgin olive oil
  • 1 cup crushed Hatch Green Chile Tortilla Chips
  • 3/4 cup shredded Mexican cheese blend

Instructions

  1. Heat oven to 350.
  2. Place tomato halves, cut side up, on a greased baking sheet. If they don't sit evenly, slice off a little piece of tomato on the bottom.
  3. Sprinkle tomato halves with seasonings, and drizzle with oil.
  4. Bake 20-30 min.
  5. Remove from oven and top with crushed chips, then some shredded cheese.
  6. Bake 20 min. longer.
  7. Serve with a dollop of Greek yogurt and pickled jalapenos.
