I’m working on the generous tomato harvest right now, and of course Hatch Green Chile Tortilla Chips! I love nachos, but sometimes I don’t want the calories. These have big flavor, and there’s certainly a lot you can add to them, just like building a nacho.
Nacho Tomatoes
Ingredients
- 3 medium to large tomatoes, cut in half through the middle
- Salt and pepper
- Granulated garlic powder
- Granulated onion powder
- Extra virgin olive oil
- 1 cup crushed Hatch Green Chile Tortilla Chips
- 3/4 cup shredded Mexican cheese blend
Instructions
- Heat oven to 350.
- Place tomato halves, cut side up, on a greased baking sheet. If they don't sit evenly, slice off a little piece of tomato on the bottom.
- Sprinkle tomato halves with seasonings, and drizzle with oil.
- Bake 20-30 min.
- Remove from oven and top with crushed chips, then some shredded cheese.
- Bake 20 min. longer.
- Serve with a dollop of Greek yogurt and pickled jalapenos.
