For a delicious small bite, after dinner or with coffee, you gotta try No Bake Bourbon Balls. They are perfect for a quick and easy dessert, and a real bonus when you don’t want to light your oven (like in Texas summers). During the holidays, I think I’ll try them using spice cookies instead of graham crackers.
No Bake Bourbon Balls
Ingredients
- 12 double cinnamon graham crackers (about 1 1/2 sleeves)
- 1 1/2-2 cups pecans
- 1 cup powdered sugar
- 2 TBSP cocoa powder
- 1 1/2 tsps cinnamon
- Pinch salt
- 1/4 cup bourbon
- 2 TBSP pure maple syrup
- 1 tsp vanilla
- 1/4 cup powdered sugar (to coat balls)
Instructions
- Place crackers and pecans in bowl of food processor. Process to fine meal.
- Add next 4 ingredients, and process well.
- In a small bowl, combine bourbon, maple syrup,and vanilla.
- Add to processor, and process until it come together as (sort of) a dough. Let sit about 15 minutes. The mixture should clump easily when squeezed. If too dry, add more of wet ingredients, very little at a time.
- Place the additional 1/4 cup powdered sugar in a small bowl. Form mixture into small balls and roll in sugar. Place on wax-paper lined tray, and chill in fridge, before serving.
