I thought you might enjoy a few pictures of Hawaii, and you’ll probably see some more when I post the thought for the week. The house in the middle picture is the one we rented, and if you click on the picture to enlarge it you’ll probably see some heavy equipment and a portable outhouse behind it. They are still rebuilding from the tsunami (the one that hit Japan, also hit Hawaii). There were large sections of the reef gone where some houses were swept into the bay. The reason the house we stay in wasn’t destroyed was because it had 16′ pilings, but the whole first floor was rebuilt.
The last night in Hawaii I got my opportunity to cook a leftover meal that everyone enjoyed. Never underestimate the power of a frittata! We had little bits left of three kinds of pork, a little fried rice, beans, greens, marinated onions, and a little avocado. I sautéed them all together, then scrambled 5 eggs with Italian seasoning, garlic powder, salt and pepper, and poured it over all the stuff in the pan and covered the pan. When it set a little, I put a little cheese on top and some thinly sliced baby tri-colored bell peppers, covered it again and let it finish cooking. We managed to avoid Spam for our entire stay (it’s a staple in Hawaii), except for some soup I ordered one day. And if you crave Ranch Style Beans and you visit Hawaii, you better bring your own, because they don’t have them. I know, hard to believe.
Usually there’s little for me to get scared by in the kitchen, but yesterday I found myself eyeball to eyeball with a tiny green lizard. This lizard apparently decided his job was to help me clean the counter by licking it everywhere possible. I’m sure the lizard who rode everywhere on our car must have been a relative of his!
