Okra and Potatoes
Ingredients
- 4 medium potatoes
- 3 TBSP butter
- 3 TBSP olive oil
- 1/2 - 1 lb okra, cut into pieces
- 1 large onion, thinly sliced
- Emerils Essence or other Cajun seasoning
- Smoked paprika (optional)
Instructions
- Boil potatoes with skin on, until just fork tender. Drain and peel when you can handle. Slice and set aside.
- Meantime, in a large skillet over medium heat, melt together butter and oil.
- Add okra and onion.
- Continue cooking and stirring occasionally and adding seasoning. Cover to help the cooking process and prevent the onions from burning.
- When the okra is partially cooked, add potatoes. If you need more oil, add a little. Continue adding seasoning and tasting, until you reach the spiciness you like. Keep the skillet covered except when you are stirring.
- When the okra is cooked through, it's ready.
