Okra and Potatoes

Okra and Potatoes

Total Time: 20 minutes

Yield: Serves 6-8

Ingredients

  • 4 medium potatoes
  • 3 TBSP butter
  • 3 TBSP olive oil
  • 1/2 - 1 lb okra, cut into pieces
  • 1 large onion, thinly sliced
  • Emerils Essence or other Cajun seasoning
  • Smoked paprika (optional)

Instructions

  1. Boil potatoes with skin on, until just fork tender. Drain and peel when you can handle. Slice and set aside.
  2. Meantime, in a large skillet over medium heat, melt together butter and oil.
  3. Add okra and onion.
  4. Continue cooking and stirring occasionally and adding seasoning. Cover to help the cooking process and prevent the onions from burning.
  5. When the okra is partially cooked, add potatoes. If you need more oil, add a little. Continue adding seasoning and tasting, until you reach the spiciness you like. Keep the skillet covered except when you are stirring.
  6. When the okra is cooked through, it's ready.
