This is one of the best fruit salads ever. And while we love Waldorf Salad, and Avocado Grapefruit Salad, Orange Walnut Coconut Salad is definitely in our rotation now. It’s Kathy’s recipe, and she said that I could share it with you! This salad is an amazing accompaniment to breakfast, lunch, or supper.
Orange Walnut Coconut Salad
Ingredients
- 6 mandarin oranges, peeled
- 1 cup crushed walnuts
- 2/3 - 1 cup flaked coconut
- 3/4 cup sour cream
- 2 TBSP honey, or other sweetener
Instructions
- Break oranges into sections of one or two. Cut each section in half.
- In a large bowl, toss together orange pieces, walnuts, and coconut. Adjust the amounts of each to your liking.
- In a small bowl, mix sour cream and sweetener. The amount of sweetener will depend on if you use sweetened coconut, and how sweet the oranges are. I used orange blossom honey, and it added great flavor.
- Toss sour cream mixture with orange mixture.
- Notes: This salad is great with apples instead of oranges. Use yogurt instead of sour cream, if you prefer.
