This morning we decided to hike to a beach you can only get to at low tide. It was a great workout, gorgeous scenery, and I found some nice shells to add to our collection. I’ll do a whole post of pictures when we return (since we can’t get them in the posts right now). As soon as we got back from the hike, we jumped in the pool to cool off. It has a negative edge overlooking the ocean, so we just hung on the edge a while. We pretty much have the island to ourselves right now, except for the staff.
Had a fabulous lunch. Don had a penne pasta with chicory and ham, and I had (grass-fed) beef carpaccio with shaved parmesan. Dinner is going to be slow cooked octopus and we are both looking forward to that. We could have chicken, but why?!
Today I have a new favorite person. The bartender, Jonathan, kayaked around the other side of the island and got me coconuts. One we ate the meat of, the other two, we drank the juice. The only bad part was we had a horrible storm and he got caught in it on the kayak. Young coconuts are one of the things I love to have in the tropics, but they are usually easier to get. There was another couple at the bar tonight, so I had to wait for them to leave, because there was no way I was sharing!!
Well, dinner was delicious. We started with a salad with shrimp on it, then baby octopus with rice, and a scrumptious dessert. There were a couple phyllo pastries with mango and nut filling, and a scoop of homemade ice cream. And now we’re planning for tomorrow.
