Of course we have to do something with pears, since they’re such a good price this week. I think we’ll use these for a simple dessert and maybe a salad.
Poached Pears
These pears are light and oh so yummy. The syrup is unbelievable.
Ingredients
- 1 cup dry sherry
- 1 cup water
- 1 tsp vanilla
- 1 cinnamon stick
- 3 slices ginger
- 1/2 cup packed brown sugar
- 2 Bartlett pears, not fully ripe, cut in half and cored
- 8 oz cream cheese, softened
- 2 TBSP cream
- 2 TBSP honey
- 1 tsp vanilla

Instructions
- In a saucepan just big enough to hold 4 pear halves, combine and bring to a simmer sherry, water, vanilla, cinnamon, ginger, and brown sugar.
- Add pear halves, cut side down into simmering liquid.
- Simmer for 20 minutes or until tender.
- Cool pears in liquid.
- When cool, remove pears, and boil liquid down (reduce) until there's only about 2/3 cup of it left. It will be syrupy. Let the syrup cool.
- Drizzle a pear half with the syrup and serve with whip cream or make a cream cheese topping.
- Combine cream cheese, cream, honey, and vanilla. Mix until smooth. Adjust sweetness if necessary.
- Serve a dollop with each pear half. And for a little extra something place a broken piece of a chocolate bar in it!
