Pork Meatball and Spinach Soup
This is a great one pot meal. The meatballs will remind you of Chinese potstickers. You should get 10-12 meatballs out of this recipe, depending on how big you make them.
Ingredients
- 1 cup cubed day old bread
- 1/2 cup milk
- 1 lb ground pork
- 1/4 cup finely sliced green onions
- 1/4 cup minced cilantro
- 1 TBSP grated ginger
- ½ tsp pressed garlic
- 2 teaspoons rice wine (sake)
- 1 egg, lightly beaten
- 2 teaspoons soy sauce
- 2 teaspoons sesame oil
- 1/4 tsp pepper
- 2 TBSP olive oil
- 6 cups chicken broth
- 1 lb baby spinach
- Salt
- 3 eggs, beaten
- 1/4 cup grated parmesan
- Salt and pepper

Instructions
- In a large bowl, combine all meatball ingredients, and form meatballs.
- Heat oil in a soup pot. Brown meatballs on all sides. Pour chicken broth over meatballs, partially cover the top with the lid, and simmer about 20 minutes, or until meatballs are cooked through.
- Add spinach and salt. Let spinach wilt down.
- Mix egg and parmesan together. Slowly pour into slowly simmering broth. When egg is cooked, stir soup and serve.
