I love Portland (Oregon) and decided to take a spring trip. My biggest challenge was enduring the six hour layover in Houston. It’s one of my most unfavorite airports, mainly because it’s so hard to navigate, between the walking forever and the carts that want to make you a hood ornament, but a free ticket motivated me. And generally I don’t like airport restaurants, then I stumbled onto Catcora’s Kitchen (Cat Cora of Iron Chef fame). Well, how could I resist? My trips are eating adventures in addition to travel. I was in terminal C, but I understand she has a restaurant in terminal E also. I had Fresh Clams & Fennel Sausage with White Wine Garlic Sauce (in our family we call fennel sausage, “sausage”) and Sautéed Spinach with Garlic and Chile. And yes, it was as awesome as it sounds. Now I know I’m getting fed on the plane, but really, do you think it will be something I can write about? Oh, and Caroline, my wait person, wanted me to mention her! I sat at the bar which was a huge piece of backlit alabaster. I’m convinced I was healed of something by just sitting there and touching it!!
