Potato Parmesan Fries
This is a great way to have delicious fries, without frying.
Ingredients
- 1 lb potatoes, cut into french fry size pieces
- Extra virgin olive oil
- 2 cloves garlic, chopped
- 1 TBSP Dijon mustard
- 2 TBSP grated parmesan, plus extra for sprinkling
- 2 TBSP panko
- Salt and pepper
Instructions
- Heat oven to 425.
- In a large bowl, toss potatoes and oil together. Make sure all pieces are coated.
- Put the rest of the ingredients in the bowl with the potatoes and toss to coat.
- Place on a greased baking sheet. Sprinkle with a little more parmesan.
- Bake about 40 minutes or until potatoes are cooked and golden.

It would work, but the texture of the center of the fries might not be as creamy as russet.
