Holidays are a time for us to get together with people special to us, and have fabulous food. And fabulous food doesn’t get any better than Prime Rib With Gorgonzola Cream Sauce. Of course, just to make the meal more decadent make mashed potatoes to complement the cream sauce!
Prime Rib With Gorgonzola Cream Sauce
Ingredients
- 4 lb boneless prime rib
- Montreal Steak Seasoning
- 2 cups heavy cream
- 1 large clove garlic, pressed
- 1/4 cup Gorgonzola
- 1/4 cup grated Parmesan
- 2 TBSP butter
- 1 tsp Dijon mustard
- Salt & pepper

Instructions
- 8-24 hours before you cook the roast, pat it dry, score the top fat. Season well with Montreal Steak. Place in baking pan on a rack or on a bed of herbs. Leave in fridge, uncovered, until time to cook..
- Heat oven to 500.
- Bake for 15 minutes, then lower heat to 350. Bake about 15 minutes per pound, until internal temperature is 120.
- Remove from oven, tent with foil, and let rest 15 minutes, before slicing.
- In a small saucepan, simmer cream for about 30 minutes, until thickened.
- Stir in garlic and cook for about 5 more minutes.
- Stir in the rest of the ingredients. Continue cooking, stirring occasionally, until cheese is melted. If the sauce separates, use an immersion blender or small food processor to bring it back together.
- Serve sauce with a slice of prime rib.
