We still have peaches frozen, from last year’s harvest. So, I decided to make an even simpler cobbler than Easy Peach Cobbler. Quick and delicious, Puff Pastry Peach cobbler is a perfect last bite.
Puff Pastry Peach Cobbler
Ingredients
- 2 lbs frozen peaches
- 1 cup sugar
- 1 TBSP cornstarch or flour
- 1 egg yolk
- 2 TBSP evaporated milk
- 1 tsp vanilla
- 1/4 tsp kosher salt
- 2 TBSP butter
- Sheet of puff pastry
- Cinnamon & sugar
Instructions
- Place frozen peaches in a large bowl. Mix sugar and cornstarch together, pour over peaches, and toss.
- In a small bowl, beat egg yolk, then beat in the milk, vanilla, and salt. Toss with the peaches and sugar. Continue tossing the peaches until a fair amount of "slurry" forms.
- Heat oven to 400.
- Pour peaches into a greased 9x13 baking dish. Dot with butter.
- Top with puff pastry. Sprinkle top of pastry generously with cinnamon & sugar combo. Cut a couple slits in center of pastry.
- Bake 35 - 45 minutes until brown.
