Taking a page from the days of cooking with my Vietnamese girlfriend, I decided to roast a whole fish with some Asian flavors. I used salmon for this recipe, but it would work with any whole fish.
Roasted Salmon
Ingredients
- 1 whole salmon, cleaned and head removed
- All purpose seasoning
- Cilantro
- Thin slices of ginger
- Thin slices of onion
- Thin slices of lemon or lime
- Extra virgin olive oil
- Toasted sesame oil
- Sesame seed seasoning
Instructions
- Heat oven to 425.
- Pat the fish dry. Remove the tail, and make slits along each side.
- Place the fish on a greased baking dish.
- Rub seasoning on each side, into slits, and in the cavity.
- Stuff a sprig of cilantro, a slice of ginger, a slither of onion, and a half slice of lemon into each slit.
- Stuff the cavity with the same ingredients.
- Drizzle the whole fish with extra virgin olive oil.
- The fish I used was a little over 2 lbs, and took about 30 min to roast. The time will depend on the size of the fish.
- When done roasting, remove the skin and gray meat. Place the deboned fish meat in a bowl. Drizzle with sesame oil, and sprinkle with sesame seed seasoning. Garnish with cilantro and wedges of lemon or lime.
