Lettuce is never in short supply at my house in the winter. All I have to do is walk to the greenhouse and cut a head or pick a few leaves. Needless to say we eat a LOT of salad at this time of year. With salad you need a salad dressing, and they can get expensive and they have unpronounceable stuff in them so I never buy any of the ready-made store bottle stuff. I always make my own. It is just too easy and mine taste better. Here are two of my favorites.
1/2 cup good oil like olive oil
5 T of balsamic vinegar
1/4 cup sugar
1 tsp salt
Put all the ingredients in a jar and shake till sugar and salt have dissolved.
1/3 cup seasoned rice vinegar (my favorite vinegar)
1/3 cup olive oil
2 tsp sugar
1/2 tsp salt
one garlic clove
1 T red onion
Put all ingredients in a hand blender (or blender) and mix till onion and garlic are chopped and blended. I sometimes add a 1/4 cup of blue cheese or feta to this, if I have it on hand.
