Sautéed Mushrooms With Basil Pesto

This recipe helped me remember how scrumptious a few simple ingredients can be.  Particularly if you love mushrooms, Sautéed Mushrooms With Basil Pesto are the best treat.  Pair them with chicken, pork, beef, or shrimp.  Make crostini topped with the pesto mushrooms and mozzarella or Jack cheese.  They are pretty versatile.

I don’t have any homemade basil pesto yet, so I used Priano Alla Genovese Pesto from Aldi’s.  Costco also sell a great basil pesto in their refrigerated section where the specialty cheeses are.

Sautéed Mushrooms With Basil Pesto

Ingredients

  • 1/4 cup butter
  • 1 lb sliced mushrooms (I used baby bellas)
  • Granulated garlic powder
  • Black pepper
  • Salt
  • Basil pesto (homemade or your favorite jarred)

Instructions

  1. Heat a large skillet on medium high. When hot melt butter in the pan.
  2. Add mushrooms, spread evenly. Let cook in butter, don’t stir, until you get browning started. Then turn the mushrooms gently, and don’t stir. The object is to get good browning on the mushrooms, and not let them stew in the liquid they give off.
  3. Sprinkle with garlic powder and pepper.
  4. When they’re done cooking, sprinkle with salt and turn into bowl.
  5. While they’re warm, stir in basil pesto to taste, but at least 1/4 cup.
