It’s the time of year for fresh okra. If you’re not growing it and can’t buy a pound for under $2.00, then I would use HEB’s frozen whole okra. It’s an excellent product, and hard to tell the difference between that and fresh. At under $2.00 for a 1 lb bag, it’s a deal.

Ingredients

  • • 2 TBSP unsalted butter
  • • 2 TBSP olive oil
  • • 1 lb of okra.
  • • Emeril’s Essence® or one of Paul Prudhomme’s seasonings

Instructions

  1. In a large skillet over medium heat, melt together butter and oil.
  2. Add okra.
  3. Continue cooking and stirring occasionally and adding seasoning (you will end up using a fair amount of it.)
  4. When the okra starts to shrivel slightly, it’s ready.
