Simple Corn Salad

Simple Corn Salad

Ingredients

  • • 4 ears of corn
  • • 2 heirloom tomatoes, cored and diced
  • • 4 oz ricotta salata, diced small (or feta)
  • • 2 Tbls extra-virgin olive oil
  • • Salt and black pepper

Instructions

  1. Preheat oven to 425°F.
  2. Wrap corn (with silk and husk) in aluminium foil and bake in preheated oven 20-25 minutes.
  3. Allow to cool and remove kernels to a bowl.
  4. Add diced tomatoes, ricotta, and olive oil. Season to taste with salt and pepper.
  5. Eat alone as a side dish or on salad greens.
